Preparation
Before cooking, try marinating the raw calamari strips in buttermilk or evaporated milk for a few hours. The natural enzymes in the milk will help tenderize the strips. Pre-breaded calamari strips need only 45 seconds to 1 minute to cook at 350 ºF in a deep fryer.
