Well-suited for classic fried calamari, small plates, and high-volume service, this cut delivers excellent yield and a more robust calamari experience. For best results, marinate calamari in buttermilk or evaporated milk for several hours prior to cooking to enhance tenderness. When freshly breaded, fry quickly at 350°F for approximately 45 seconds to 1 minute until lightly golden. Avoid overcooking to preserve a tender bite while maintaining optimal value and consistency.
